Wrought Iron & Nickel Clad Santoku

52100 core steel clad in early 1900s anchor chain wrought iron, it features a polished nickel shim to inhibit carbon diffusion and keep the cutting edge insanely hard. An aluminum bolster adds some 'bling' and maintains the silver aesthetic atop the ironwood handle, and this knife features my most modern handle design. At about 7", it's a great companion to a 8.5-10" chef knife and is designed with a convex edge to go through veggies like they aren't even there.

 

Best at: Veggies and push cutting

Worst at: Rocking, this blade is relatively flat
