Wrought Iron and Nickel Clad Chef
52100 core steel clad in early 1900s anchor chain wrought iron, it features a polished nickel shim to inhibit carbon diffusion and keep the cutting edge insanely hard. An aluminum bolster adds some 'bling' and maintains the silver aesthetic atop the ironwood handle, and this knife features my most modern handle design. At about 9", it's a great companion to a veggie-focused knife like a Santoku or Nakiri, and is a true workhorse in the kitchen with its convex blade grind.
