7.25" 52100 Gyuto - Forged & Distressed
This is my favorite profile and overall size at the moment. Super thin, nimble, and not too long or short, this is the knife shape that I reach for in my own kitchen nearly every single time. Forged from 52100 and left with some brut de forge texture, this knife will features exceptional food release and is a tremendous performer in the kitchen
Best at: Being an overall great performer
Worst at: Slicing things like a brisket where you'd want a longer edge
